Baked “Fried” Chicken, E.W and Fish Tacos

Sunday I had taken out chicken thighs for dinner but was at a loss for what to do with them. So I googled “chicken thigh recipes” to get some ideas. I got a couple different recipe ideas so I used them and made my own. I made Baked “Fried” Chicken. All the flavour and crispyness (sort of) of fried chicken, but it was much healthier because it was actually baked. Here’s what I did:

2 tbsp. of Dijon mustard

2 tbsp. maple syrup

1 tbsp. canola oil

poultry seasoning, paprika, season salt

Put all of the above in a bowl and mix together. Pour in a Ziploc bag with the chicken and marinate it for at least half an hour.

Then mix bread crumbs and a little bit of canola oil in a bowl or on a plate and then dredge the chicken in it. Put the chicken on a wire rack on a roasting pan and cook for about 35-40 minutes. It comes out crispy and delicious.



I made it with J’s famous fiesta corn which I have only mentioned about 150 times on the blog (lime, garlic, chili powder, parm… ring a bell?). I figure we need to eat as much corn as we can handle the next week as it is likely the last week we will have it. My lunch today was delicious leftovers of both.

Monday’s WOD was the perfect WOD to try out my new shoes. It was a lifting WOD. It was similar to one of the hero WOD’s DT but it was modified by our coach to be a little different in that it has less reps and uses two bars. He called it E.W.

5 rounds
9 deadlifts
6 hang cleans
3 push press

It was tough. I started with 85lbs for my deadlift but after a round and a half I lightened it to 65lbs. I wish I had tried 75lbs though because I felt like I could do more than 65lbs. For my hang cleans and my push press I did 55lbs and it was tough but a good weight. I felt more stable in the new shoes compared to my runners.

After that WOD we did 5 rounds of 1 min of double unders and 1 min of sit ups. My coach didn’t want me doing double unders because of my leg so I did plank hold. Ouch. 5 minutes of plank holds and 5 minutes of sit ups.

I stopped and grabbed some groceries and then made a delicious dinner of fish tacos. I made a honey lime mango slaw and a creamy spicy sauce with Greek yogurt and I breaded and baked the tilapia in the oven. It was so good!


I also made a big pot of sweet potato, butternut squash, corn and coconut curry soup. It smells like Fall in the house.

The Big Reveal

The weekend finally came and sadly it’s almost over. Sunday night is always bittersweet because its relaxing but it’s the end of another great weekend. This weekend was jam packed of fun times. Friday after work I went to CrossFit. I tried going a little bit heavier. We worked on skills for our strength wod. I did strict pull ups. I was so close to getting it without a band. So so close! Next time for sure.

1 rd of Cindy (5 pull ups 10 push ups 15 sit ups)

I did sit ups but normally Cindy has 15 air squats. The rest of the class did jumping dumbbell squats at the beginning but I did air squats. Also for the lifts everyone else did 2 cycles of bear which is 1 power clean, 1 front squat, 1 push press, 1 back squat, 1 back press. With my injury I decided to modify quite a bit and I still had a killer workout. I used 55 lbs for this workout.

Friday night we had friends over. It was a really nice visit and J made the most delicious steaks.

Saturday I decided to skip CrossFit because my leg was quite sore after Fridays workout. I helped out at the corn stand. It was a beautiful day.

Then I enjoyed some me time and got my nails done and went on the search for some new shoes. I have found that my running shoes have too much cushioning for lifting. It’s great for running but I find the cushion makes me feel really off balance when I am lifting heavy. I am really nervous of falling again so my coach suggested a flatter shoe. I bought myself these!

My new kicks! They are a lot brighter than what I wanted but they were the best fit so I went with fit. J and I had a date night and went for dinner. This morning I went for a quick 3km run and then did some foam rolling when I got home.

It was really a fun action packed weekend. Now I have to face this massive pile of laundry to fold.

Dumbbell Workout and a Shake I Actually Liked

I have always been a much bigger fan of lifting with a barbell as opposed to dumbbells.  I honestly think it’s just because I feel bad ass lifting a barbell packed with weights.  Even if it doesn’t add up to all that much.  Our Wednesday wod was all dumbbells and it proved to me that dumbbells can kick my butt big time.

Our strength WOD was working to a 1 rep max on our deadlift.  I know I have set it many many times that I love the deadlift.  But it is actually kind of torture for me right now when that’s our SWOD lift because I am not supposed to pack on the weight right now, and I love to go very heavy and deadlift it.  Before my injury I was up to 185lbs and had my sites on 200lbs.

I couldn’t do that last night… or rather I stopped myself, and thankfully my coach knew I should stop too.  I worked up to 135lbs  and did 2 reps and that’s when he said ok that’s enough, you’re done.  I am thankful he did because I think he could see me looking at the bar, and looking at the pile of plates, and looking back at the bar.  It was tempting to go just a little more, but I stopped.

The WOD was all dumbbell work.

EMOTM (every minute on the minute) for 10 minutes

2 squat cleans

3 front squats

5 push press

manmakers (for the rest of the minute)

I did make some modifications, I did hang cleans and after two rounds of manmakers I switched to sit ups because I could really feel it in my quad and didn’t want to push my luck since I was already doing the front squats and push press with the weight.  I used 12lb dumbbells for this workout.

After I got home I did some more ab work.  I did some Russian twists and then did plank.  I felt really good about my plank time.  I am holding it much longer than I used to.  I think it’s all the planking I did in workouts when I couldn’t do so many of the movements.  I am going to try and do it more often and time myself to see how  I progress.

I had a meeting to attend for Charlotte’s school so I had to eat quickly and I wasn’t hungry enough to make something so I made a shake.  I am not really a big shake or smoothie person.  I would rather eat a meal than drink it.  But I thought since I am not hungry and need something quick I would try it.  So I made one with Chocolate whey protein powder, Vanilla Almond Milk and some Salted Caramel Monkey Butter (thanks again Laura!!).  It was actually pretty good.

When I got home I was hungry (around 830) and I had some chicken with guac and salsa.  I wanted an egg sandwich so bad, but my sister talked me down and convinced me to lay off the carbs and go with protein since it was so late in the evening.  I am glad she did.  J and I watched the Ultimate Fighter series with my fave Rhonda Rousey.  I stayed up way past my bedtime though.  Thank god the weekend is almost here!!!

Deep Thoughts I Have Gathered Through Pinterest

Last night when I was laying in bed I was browsing Pinterest and looking through some of the pins I have done on my “words” board. That board reflects quotes and sayings that I think are pretty awesome. I was rereading them all and some of them really stood out as mantras for how I want to live my life.

Not to say I want to change how I live my life, because the life I am currently living is pretty great. They are just things that really stuck with me.

I love this one. I think it’s the little things in life that we do for each other that matter the most. In my relationship I really appreciate the little things because past relationships of mine, there were no little things. It’s the day to day gestures that make me feel loved.


This one really hit home with me, the reason being I tend to hold onto things from my past. The past few years I have had to learn how to let them go. And move on. I have really come a long way and I am very proud of that.

This one is so true. When ever I am not feeling myself I go to bed early and sleep it off. Sleep cures all. Laughter is so important. J makes me laugh every single day. We have fun together and that’s one of my favourite things about our family.

I love this. I am not perfect by any means. But J makes me feel like I am. So does my daughter. I know I am always accepted and my quirks (I won’t call them flaws) are part of what makes me who I am.

This is just the truest thing ever. No explanation necessary.

Today has been a long long day. It is my drive my daughter to her various extra curricular activities night. I did manage to get a quick run in which broke up the night a bit. I kept it short because I had limited time and also because I have very sore legs today. I think I could have shin splints?? I haven’t had them before but the front of my right leg is sooooo tight! I did lots of stretching in the lobby of C’s singing school and will foam roll again this evening.

Tabata Chipper and Chicken Dinner

For a Monday I really can’t complain. I usually like to take Monday to talk about how sad I am that the weekend is over and how I can’t wait for the weekend. But today really wasn’t too bad. I got up early and had a nice breakfast. I made scrambled eggs with cottage cheese in it. I saw it on Pinterest and used that as my inspiration. I warmed a couple pieces of leftover roast with it and it was a delicious breakfast.

Lunch was soup and then my second lunch later afternoon before my workout was roast beef and carrots. Snack was plain Greek yogurt flavoured with chocolate protein powder and blackberries.

Tonight’s wod was a Tabata based wod. And it’s one we call a chipper. A lot of reps to just chip away at.

Tabata each of the following
50 pull-ups
75 push-ups
50 kettle bell high pulls
100 sit ups
40 hang power cleans
50 dumb bell push press
300 m row.

This was my modified version of the wod. Some of the movements were a little different for the rest of the class. There was a 20 minute cap and only one guy finished. I got 35 dumb bell push press in and that’s where I ran out of time.

We had a strength wod before the workout of 5 rounds of 5 straight leg deadlifts and 10 body rows.

My arms should feel it tomorrow. My legs are so tight today from running yesterday.

Dinner was grilled chicken, asparagus and tomatoes served with guacamole.

J grilled up a whole bunch of chicken for me so I can have it for lunches for the week. This really helps me stick to healthier eating. One thing that is not helping is having homemade cookies in the house. They are so good! I can’t wait till they are all gone.

Sunday Run Day

Mother Nature was kind to us and the rain finally let up for us yesterday just in time to go to the fair as we had planned. We went with J’s sister and her husband to watch the demolition derby. We love to all pick a car for each heat and cheer on that car. It’s kind of a tradition. We took C on some rides and had some yummy fair treats. We got hot apple cider for the derby to keep us warm because it was a chilly night.

This morning was a nice lazy morning. J had the whole day off which doesn’t happen too often so we had a nice family breakfast. Then we headed to Party City in search of C’s Halloween costume. We were unsuccessful but we did find this mask.

Then we did grocery shopping and came home to enjoy a nice lazy day. I did a ton of laundry and tidying. Then I decided to go for a run. It was the most perfect weather for running. Fall is my very favourite time of year to run. I drove to my old apartment and ran a 3km route I used to do regularly. I can’t really run near our place because the roads hurt my knees. It felt so so so good to run.

When I got home I did some serious foam rolling and held the plank. I think I want to try the whole “plank a day” thing I have seen in the blogosphere. I have also iced and am gearing up for round two of my foam rolling as my legs still feel tight.

I have to mention my favourite songs right now. I made a great running mix and these four songs I could listen to for the whole run. It was a nice medium to quick pace. I may have listened to the Bastille song over and over several times.


J made the most amazing roast for dinner. Seriously the best I have ever tasted. It was cooked absolutely perfectly. I made roasted carrots and a yummy garlic mashed potatoes with it. C and I also made peanut butter and chocolate chip cookies that turned out delicious. I could eat the whole batch. We packed them up into containers to distribute to family members.

I really had a great weekend. Lots of family time an awesome workout and a really great run. And some delicious meals. And the best guy and little girl any girl could want in her life. I’m a very lucky lady.

Saturday Morning Snatch

The past two days I got some awesome workouts in. Thursday I was sore as can be from Wednesdays wod. It was a good sore. Except for the arm pain I was having. It was a constant tingling feeling. It looks like my carpel tunnel is acting up. It looks like it’s probably from working at a computer all day and combined with my phone and iPad use. It’s pretty sad. I need to unplug a little more.

Thursday night was a rest night and I went for a massage. Friday I went after work and did another partner workout. We did:
17 min AMRAP
35 of each of the following
Clean and jerk
Kettlebell swings
Burpees over partner
Wall ball
Front squats
Goblet squats passing to partner
Sit-ups with wallball passing to partner

I know there was more but I can’t remember. All I know is it was a long one. The rest of the night C and I just relaxed. J was at the fairgrounds setting up for the calf show he had today.

This morning we got up and went to the gym. It was a rainy morning so it was all inside. We got a lesson on the “hang snatch”. I just used a really light bar because there is an explosive movement in the hips that is too much for my leg right now. But I think I did pretty good with the movements. It felt good. Snatches are not a lift I do often.

This is the modified workout I did. There were other movements I couldn’t do that many of. I did try burpees but the jumping in part bothers me still. Oh darn. Haha I kid. I do miss how they kick my butt.

I love Saturday morning workouts because I love how good I feel for the rest of the day. C and I did some errands and headed home. Then she had a play date and I hit up target. I got a couple bikinis on clearance (for our trip this winter) and some other goodies for around the house.

We are just hoping the rain lets up because our plans are to go to the fair tonight to watch the demolition derby. It’s kind of a tradition we go every year. We are keeping our fingers crossed it clears up.
